Molasses Cookies
Nothing says fall like Molasses cookies! These are a favorite in our house, both the smell while they are baking as well as the warm taste testing when they are done. I have fine tuned this recipe over the years and you won't find a better recipe! These cookies are great to take as a gift in a mason jar. They cook very uniformly and stack nicely.
1- 1/2 cups of butter, softened
2 cups of Sugar
2 Large Eggs
1/2 C Molasses
4 1/2 C All Purpose Flour
4 teaspoons Ground Ginger
2 teaspoons Baking Soda
1- 1/2 teaspoons of Ground Cinnamon
1 teaspoons Ground Cloves
1/4 teaspoon salt
Preheat over to 350 degrees. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and molasses. Combine all dry ingredients and gradually add to creamed mixture and mix well.
I use a small ice cream scoop and form small balls. I then place the dough in ball form into the freezer for 10 minutes or so. I think this helps the cookies stay uniform in shape and the butter does not over melt in the baking stage of the cookies. Bake at 350 for roughly 10 minutes. I take cookies out just before they look done. Super soft and chewy, SO DELICIOUS!!!!!!!!!!
